Choosing to go with fruit in your jello shots is not only a very delicious way to go, but also a healthy one. The secret of keeping them buoyant is explained in the last tip, “Fancy Jello Effects”. Depending on what you’d had in mind, you can either decide to float the fruit or let it sink.

Some of the fruits that are easier to float are apples, bananas, grapefruit, oranges, raspberries, and strawberries. These fruits have less density.

The fruits voted Most Likely to Sink are apricots, cherries, fruit cocktail, grapes, peaches, pears, and pineapple. These fruits have a greater density than most others.

Fruits basically work great with jello shots, but there are a handful of them that have an enzyme that stops the gelatin from becoming solid. Some that have that quality are fresh or frozen pineapples, kiwis, mango, figs, guava, fresh ginger, and papaya. However, if these fruits are canned or cooked, you shouldn’t have any problem using them.
